Strachatella square with cherries

Strachatella pie with cherries – ingredients
- For bÑ–skvÑ–tu:
- Eggs – 3 pieces.
- Sugar – ½ cup.
- Flour – ¾ cup.
- Cocoa – ¼ cup.
- Oil – ¼ cup.
- Baking powder – ½ tsp.
- Jelly with cherries:
- Sweet Cherries – 500 g.
- Cherry jelly (or other red jelly) – 2 packages.
- Masa Strachatella:
- Cream (from 30%) – 300 ml.
- Mascarpone – 500
- Powdered sugar – 2 tbsp.
- Dark chocolate – 100 g.
- Gelatin – 1 tbsp.

Sponge cake
Separate the proteins from the yolks.
Beat the egg whites until stiff foam, add sugar one spoon at a time, beat well each time at the highest speed of the mixer. Add the yolks one by one, alternating them with a spoonful of oil, beat at the lowest speed of the mixer.
Mix flour, cocoa and baking powder and sift to the egg mass, carefully knead with a spatula.
Line the bottom of a 21×26 pan with parchment, pour the dough, and level it. Bake at 180 degrees for 20-25 minutes. Leave to cool.
Jelly with cherry
Wash the cherry, remove the pits.
Dissolve the jelly in 700 ml of hot water, leave until slightly runny (it still flows from the spoon, but no longer water). Mix with cherries and spread on cooled biscuit.
We put everything in the refrigerator until completely empty.
Strachatella mass
Dissolve gelatin in ¼ cup of water, leave to cool.
Beat well-cooled cream with powdered sugar until stiff, mix with mascarpone.
Add 2 tablespoons to the cooled gelatin. cream mixture, mix well. Pour the gelatin into the cream mass, mix well.
Grate the chocolate on a coarse grater. Add half of the grated chocolate to the creamy mass, mix, spread on the hardened jelly. Sprinkle the rest of the chocolate over the cream mass. We send the cake to the refrigerator.
