Strawberry cheesecake

Smakota ( offers you strawberry cheesecake recipe. The delicate cheese flavor is subtly complemented by strawberries. Also, in this recipe, strawberries can be replaced with any other berry with a pronounced taste.

Strawberry cheesecake recipe

  • For the dough.
  • sugar – 50 g.
  • oil – 100 g.
  • vanilla sugar – 1 tsp.
  • yolk – from 1 egg.
  • flour – 220 g.
  • For filling
  • cottage cheese – 600 g.
  • sugar – 150 g.
  • eggs – 3 pieces.
  • sour cream – 350 g (preferably homemade).
  • strawberries – 200 g (if thawed strawberries – then thawed weight, without juice).

We prepare the dough. Beat the butter with regular and vanilla sugar to a creamy consistency. Add the yolk, beat until smooth. Add flour and knead the dough. (flour should be added gradually, because it has different moisture levels, so the flour may be less or more).

We form a disc from the dough, wrap it in a film and send it to the refrigerator for an hour. Take out the cooled dough, roll it out and put it in a mold (the amount of ingredients is calculated for a mold with a diameter of 20-22 cm). It is not necessary to make sides – at your request.

We put foil on the dough and pour “gruz” (dry beans or rice). Put in an oven heated to 180 degrees and bake for 15 minutes. We remove and take away the “cargo”.

We are preparing the filling. Combine cheese, sugar and sour cream, mix until smooth. Add the eggs, one at a time, mixing well after each addition.

Strawberries are ground into a puree with a blender. Add to the filling and mix. Pour the filling into the base.

We put our cheesecake in an oven heated to 160 degrees and bake for about 1 hour.

Only the middle of the finished cheesecake should tremble slightly when tapped with a spoon on the side of the mold. Remove the finished cake from the oven and cool to room temperature. Then we send it to the refrigerator for 4-5 hours.

Remove the cheesecake from the mold and serve. Bon appetit!
