Preparation of tarts with custard cream:

Prepare the cream: add vanilla to milk, bring to a boil. Remove from heat and set aside for 15 minutes.

Beat the yolks with sugar until white. Add flour and starch, mix and pour 1 cup of warm milk. Mix thoroughly. Pour in the remaining milk, stirring constantly with a wooden spoon. Put on a small fire and cook, stirring, for about 12 minutes.

When the cream reaches the right consistency (when you run your finger along the convex side of the spoon, a clean line remains on it).

Cool the cream completely. Whip the cream into a lush foam and carefully, stirring from the bottom up with a spatula, add the completely cooled cream.

We prepare baskets: we grind cookies, make crumbs. Mix with soft butter and honey. We divide into as many portions as you have molds for baskets (10-16). Spread the mass on the bottom and walls of the molds, put to bake in an oven heated to 200 ° C for 10-12 minutes.

Cool the tarts completely, remove them from the molds, fill them with custard cream.

Large berries are cut into beautiful slices, small ones are left as is. Spread the berries on the cream and sprinkle with powdered sugar. Garnish with mint.
