Dumplings, probably the most popular Ukrainian dish. Dumplings can be prepared at any time of the year and with different fillings, dumplings with potatoes, cheese, mushrooms, cabbage; blueberries, cherries, cherries, strawberries. Can you count all the fillings for dumplings. Probably every housewife has her own unique dough recipe for dumplings, which suits only her. Dough for egg dumplings

  • Flour – 3 cups.
  • Water – 1 glass.
  • Chicken eggs – 3 pieces.
  • Salt – 0,5 tsp.

When preparing any dish with flour, you must start by sifting the flour. So, sift the flour. Beat the eggs with salt, add half a glass of water to the eggs.

Make a well in the flour, pour in the egg mixture, knead the dough, gradually adding the rest of the water. We form a ball from the dough, cover it with a clean napkin and leave it on the table for 20-30 minutes.

We roll out, cut out circles and form dumplings.

Dough for dumplings on sparkling water

  • Flour – 3,5-4 cups.
  • Carbonated water – 1 glass.
  • Egg – 1 piece.
  • Oil – 4 tbsp.
  • Salt – 0,5 tsp.
  • Sugar – 0,5 tsp.

We sift the flour, add 3,5 cups of flour to the bowl (if needed, add more), salt, sugar. We make a hole in the harrow, drive an egg into it, pour in carbonated water and oil. Knead the dough first with a fork (or a spoon – whichever is more convenient for you), and then with your hand. Knead a soft, elastic dough that does not stick to your hands, if necessary, add flour. Cover with a napkin and let the dough stand for 20 minutes.

Dough for dumplings is traditional

  • Flour – 2 cups.
  • Egg – 1 piece.
  • Water – ½ cup.
  • Oil – 1 tbsp.
  • Salt – a pinch.

Pour all the liquid ingredients into a bowl, add an egg, a quarter of the flour, and salt. Knead the liquid dough with a fork. Now we add more flour with a spoon and knead until a dough suitable for kneading by hand is obtained.

Pour a little flour on the work surface, transfer the dough there and start kneading it with your hands, constantly sprinkling it with flour (at first, the dough will be quite sticky, as it should be).

To make a light dough, pour all the liquid ingredients into a bowl, break an egg into it, add salt and a quarter of the flour. Knead the liquid dough. Then we add more flour (in several portions), in small portions, and knead with a spoon, until a dough is obtained that can be kneaded by hand. It should be cool, a little sticky, but it should come off your hands. Knead the dough, cover with a napkin and leave to rest for 20-30 minutes. After rest, it will be elastic. And you can start sculpting dumplings.

Custard dough for dumplings

  • Flour – 500 g.
  • Water – 300 ml.
  • Salt – 0,5 tsp.
  • Sugar – 0,5 tsp.
  • Butter – 50 g.

Sift flour, add sugar and salt, mix. Bring the water to a boil, add the butter, it should melt completely.

Pour hot water with butter into the flour in a thin stream and immediately stir so that no lumps form. We knead the dough first with a spoon, and then with our hands. If the dough is sticky, add more flour.

We roll the dough into a ball, tightly cover it with a pan, cover the pan with a towel and leave the dough for an hour. In the meantime, you can prepare the filling.
