We offer you options for liqueurs with and without vodka. In these recipes, we will use pitted cherries, as they contain tannins and hydrocyanic acid, which can make the finished drink bitter.

Cherry liqueur with vodka

  • black cherry berries – 1 kg.
  • vodka – 2 liters (or 1 liter of 96% alcohol).
  • water – 400 ml.
  • sugar – 0,5 kg.

Peel the ripe berries from the stalks, wash, dry, remove the stones, trying to spill the juice as little as possible. Pour pitted cherries into the jar. In a separate container, mix vodka and boiled water. Pour the cherries with diluted alcohol, close the lid tightly and put in a dark place for 10 days.

Strain the cherries through cheesecloth, cover the berries with sugar and mix well. Cover the top with gauze and tie tightly. Put for a week in a warm place (18-25 degrees).

Pour the vodka tincture into a glass container, seal it tightly and put it in a dark place.

After a week, strain the berries again, and mix the resulting juice with vodka tincture. Mix well, and infuse for a day. We pour the cherry liqueur into bottles and hermetically close with corks. And put it again in a dark, cool place, infuse for at least 4 months.

Classic cherry liqueur (without vodka)

  • cherries – 2 kg.
  • sugar – 800 g.
  • water – 250 ml.

We wash the berries, remove the stones, pour 200-300 g of sugar into the bottom of a three-liter jar, pour the cherry on top, the rest of the sugar on top of the cherry, and pour boiled water. We install a water seal or put on a glove with a hole punched in one of the fingers (it will have to be fixed on the neck with a rope or a tight rubber band). We put the jar with berries in a warm, sunny place. The fermentation process lasts 2-3 weeks. After the end of fermentation, filter the pour through cheesecloth. After 2-3 days, filter through cotton wool and bottle for storage.

Cherry liqueur is aromatic

  • cinnamon – a pinch.
  • vanillin – 1 tsp.
  • nutmeg – a pinch.
  • ripe cherries – 1 kg.
  • vodka – 400 ml.
  • clove buds – 4 pieces.
  • cherry tree leaves – 3 pieces.
  • sugar – 0,5 kg.

Wash the cherry, remove the pits. We put it in a glass jar and cover it with sugar. Put in a warm place (can be in the sun) for 8-10 days. Add cloves, vanilla, cinnamon, nutmeg and cherry leaves, vodka and leave for 4 weeks. Then the liqueur is filtered and bottled.
