A recipe for strawberry liqueur without vodka and alcohol

In this recipe, it is better to use fresh strawberries, rather than frozen ones, because yeast that lives on the surface of the berries is needed here. But you still need to wash the berry, otherwise the drink will have an unpleasant earthy aftertaste. The result is a very aromatic drink with a strength of no more than 14%.

Washed and peeled berries should be placed in a three-liter jar and covered with sugar. Mix well, tie the neck of the jar with gauze in several layers and put it in a dark warm place (2-3 ° C) for 18-25 days. When the berry starts boiling (foam will appear, a hissing sound and a sour smell will be heard), the gauze should be removed and a water seal should be installed on the jar or a rubber glove with a hole in one of the fingers should be put on. Strawberries ferment for 2 to 4 weeks. During fermentation, the temperature should be maintained at 22-27 degrees.

When the drink has fermented (the glove will deflate, and the water seal will stop bubbling), it will need to be filtered through several layers of cheesecloth and sent to a cool place for a week. Then strain once more (you can through cotton wool), pour into clean bottles and store in a dark, cool place. The shelf life of such a tincture is 2-3 years.

Recipe for Polish strawberry liqueur (Likier Truskawkowy)

Polish strawberry liqueur

, which in the homeland is referred to as Likier Truskawkowy. In principle, it is not much different from strawberry liqueur, only a little sweeter and it takes much longer to prepare. It is stronger than the previous infusion, because vodka is needed for its preparation. In addition, it is very important to maintain sterility, so it is better to pre-sterilize the container.

Wash the strawberries and remove the stalks. Pour it into a sterile jar of the appropriate volume and pour vodka so that it completely covers the berries. Close the jar tightly and send it to a dark, cool place for 1 week. After a week, filter the infusion, pour the strawberry vodka into a clean container and close it. Cover the rest of the strawberries with sugar, mix well and cover tightly with a lid. Both containers should be stored in a dark, cool place for at least 1 month.

After a month, filter the strawberry syrup, mix it with vodka and pour the finished infusion into sterile bottles. Close the bottles well and keep the drink for a few more months (if you have enough patience, you can roll them into jars and open them until the New Year). Candied and alcoholized strawberries can be added to ice cream or baked goods immediately after separation from the syrup.

Strawberry liqueur with a citrus taste

  • Lemon – 1 piece.
  • Strawberries – 1 kg.
  • Vodka – 0,5 liter.
  • Sugar – 250 g.

Put the cleaned strawberries in a jar, cover with sugar and leave to infuse for 3-4 hours. Add vodka, tightly close the jar with a lid. Insist in a dark, warm place for 30 days. Filter the tincture through cheesecloth, pour into another container. Add the zest (yellow skin without white pulp) and the juice of one lemon. Mix well, cover hermetically with a lid, infuse for 14-16 days. Filter the drink through cotton wool, pour into bottles for storage. Before use, keep in a dark, cool place for 1-2 months, the taste will noticeably improve. Shelf life – up to 3 years.
