Remember, is there any dish that gives you the opportunity to mentally return to childhood? Usually, such food is associated with the warmest people for us: grandmother, mother, godmother. Such meals remind us of moments of caring for ourselves. Such a dish in Transcarpathia is “Fries growl“. It is here that housewives work magic in the kitchen for their families, creating absolutely unsurpassed masterpieces! Would you like to visit the Transcarpathian family for lunch?

Ingredients for making “Rocot Potatoes”:

  • Potatoes – 1 kg.
  • Chicken eggs – 7 pc.
  • Onion – 2 heads.
  • Hard cheese – 200 grams.
  • Homemade sour cream – 3-4 spoons.
  • Smoked sausage – 1 piece, approximately 0,7 kg.
  • Refined sunflower oil – 80 ml.
  • Spices: salt, black pepper, sweet red pepper, herbs.

Recipe for cooking Rokot potatoes:

To begin with, it is necessary to prepare the products for further processes, namely, boil the potatoes in their skins in slightly salted water, as well as the eggs (boil for about 8 minutes). We advise you to let these products rest and cool, because hot ingredients will not hold the desired shape during cutting. It is important to note that the board must be without defects (if it is made of wood, then without needles) and must have a flat surface, not swell from moisture.

Cut the cooled potatoes into 0,5 cm rings.

Lubricate the container (it can be a cauldron or a high pan) with fragrant oil, spread the potatoes in a nice even layer. Feel free to sprinkle with your favorite herbs and spices.

Well, now we move on to the second part of the preparation, namely, carefully cut the hard-boiled eggs into large pieces. Again, we apply a light plume of fragrant greens and salt. Moisten this filling with a delicate, high-fat sour cream. We make the usual roasting of the onion, bring it to a brown caramel color. Add this to our creation in the vessel.

We alternate a layer of eggs, potatoes and sour cream and finally the star of the dish appears – a picnic! Its pieces should reach the size of half a centimeter, and its main task is to decorate the dish and give it a smoked aroma! The cream can be sprinkled with grated cream cheese.

And here there are two ways: baking or cooking. And anyway, it will be delicious to the point of impossibility. You can try both options, it depends on the traditional recipe of one or another Transcarpathian family.

If you chose the baking strategy, it will be 200 degrees and 40 minutes. If you want to cook such a dish, count on a small fire and an hour of time.
