Tiropita is a Greek snack with an egg and cheese filling

Popular Greek snack with egg and cheese filling is called Tiropita. It can be found in almost every local bakery. Moreover, they even came up with special sauces for this mini puff pastry pie. Many of them are based on yogurt.

The recipe for Tiropita quite simple and does not require much time. Especially if you do not make the dough yourself, but buy ready-made puff pastry. However, nowadays it is not difficult to find a more traditional option for this dish in supermarkets – phyllo puff pastry, which is slightly reminiscent of translucent sheets of waxed parchment and is fresher than classic puff pastry.

Most often Tiropita served for breakfast with coffee or juice. However, these triangles are perfect for fun, crowded parties. It is also a popular street food. There are many variations of fillings – with the addition of spinach, basil, garlic or any types of cheese. Try to cook it – you won’t regret it.

Take the butter out of the refrigerator in advance – it should be very soft. You can even melt butter.

Beat three eggs well in a separate bowl. Add shredded cheese to the eggs. If it is a soft variety, it is enough to crumble it with your fingers, if it is hard, cut it into small cubes or even rub it.

We also add homemade cheese so that there are no large lumps. Salt the whole mixture.

Place the sheet of dough horizontally in front of you on a large board. Lubricate it with oil. Depending on its size and the desired size of the triangles, cut the dough into several equal vertical strips.

The width of the strip is the side of the future triangles of the Tiropita Greek snack with egg and cheese filling. Optimal – 8-10 cm, but you can try to make smaller triangles.

Place a tablespoon of cheese and egg filling on the edge of each strip of dough closest to you, about 2 cm from the edge. If the strips are not very wide (5-6 cm), a full teaspoon of filling will be enough.

Next is the matter of technology. We bend the corner of the strip so that it turns out triangles and continue to repeat the movement with a “snake” until we reach the upper part of the strip. Place the finished triangle on a baking sheet. We also grease the top with oil. And so – until you use all the filling.

We put the tray in the oven, heated to 180 degrees. Bake for 10-15 minutes until the dough begins to acquire a golden color. Before serving, you need to let Tirapita cool down a little.

You can also freeze unbaked triangles to quickly prepare a tasty and hearty snack if necessary in case of unexpected guests. In this case, they will not need to be defrosted before the oven, but the cooking time will increase to 15-20 minutes.
