Tkemali according to the recipe of a Georgian housewife

Today we are publishing an authentic recipe Georgian sauce tkemali from Georgian hostess Nona Tavadze.

We will remind you that tkemali is a Georgian spicy sauce in the preparation of which plums, garlic and herbs are used. Tkemali tastes very good with meat and fish, as well as with side dishes – potatoes and pasta.

We suggest you prepare tkemali sauce together with Smakota (Smakotainfo.com).

The recipe for making tkemali according to the recipe of a Georgian housewife

  • Apricot or sour plum – 500 g.
  • Garlic – 2-3 cloves.
  • Cilantro – 3 sprigs.
  • Dill – 4-5 sprigs.
  • Green ombalo (mint flea).
  • Pepper and salt to taste.

Wash plums or sour plums well, put them in a saucepan, pour two glasses of boiling water over them, cook for 10-15 minutes, remove from heat. Cool a little, remove pits from plums. Grind the plum through a sieve.

Add crushed garlic, salt, finely chopped greens and capsicum to the grated plum.

The finished sauce should have the consistency of liquid sour cream.

If there is no ombalo, then you need to increase the amount of other above-mentioned greens.

For conservation and storage, tkemali are poured into bottles, and heated oil is poured on top (about two fingers).
