Tkemali plum sauce – preservation for the winter

Today we will prepare a famous one plum sauce – tkemali. Tkemali goes well with meat, poultry and fish. The components of dishes in combination with it reveal their taste, besides, they are better digested.

У preparation of Tkemali sauce commonly used are garlic, basil, ombalo (a type of mint), coriander, saffron, hot pepper, cilantro, dill, celery, basil, parsley, bay leaf, and salt. You can buy a bag of ready-made mixture for Tkemali at the bazaar in the spices department, or you can use the well-known and affordable seasoning of hops-suneli.

From the proposed ingredients, you get 2,5 liters + a little more of the finished sauce. Vinegar is added to the sauce only if we preserve tkemali for the winter.

The recipe for making tkemali plum sauce

  • Plum (or apricot) – 3 kg.
  • Cilantro – 100 g.
  • Garlic – 11 large cloves.
  • Suneli hops (seasoning) – 1 package (20 g).
  • Sugar – 5 tbsp.
  • Salt – 3 tbsp.
  • Red pepper – to taste.
  • Vinegar – 6 tbsp.

The composition of the hop-suneli seasoning is salt, white mustard, coriander, basil, chili, marjoram, parsnip, bay leaf, thyme, celery, cumin.

So we start preparing the sauce. Wash the plums thoroughly, remove the stones (the weight of the plums without stones is indicated in the recipe). We put it in a deep, thick-walled pan, put it on the lowest heat, cover it with a lid. Stir the plums from time to time so they don’t burn. Boil the plums for about 25-30 minutes, remove from the heat, cool a little and grind through a sieve (you can try to beat with a blender together with the skin).

To the homogeneous plum mass, add the suneli hop seasoning, sugar, salt, and red pepper. Boil the sauce for 20-25 minutes on the lowest heat with the lid closed.

Finely chop the cilantro and squeeze the garlic through a press. Add to the plum mass and simmer on low heat with the lid closed for 30 minutes (do not forget to stir from time to time so that the sauce does not burn).

Our sauce is ready if we close the sauce for the winter. Pour vinegar and boil for another 5 minutes. Pour into sterile jars, hermetically close with metal lids.
