Turkish lentil soup

Traditional Turkish lentil soup in the homeland called Merchimek or Merjimek. Yogo the recipe is as simple as possible and does not contain exotic ingredients.

You will get a wonderful tender and at the same time very nutritious lentil soup, in which the sharp taste of pepper, the sourness of lemon and the piquancy of mint are originally combined.

Cut the onion into small pieces. Peel the potatoes and cut them into rough pieces. Cut the tomatoes into medium slices.

Heat a little olive oil in a deep pan. Add potatoes and onions and fry over medium heat, stirring constantly for 4-5 minutes.

Add lentils and mix well. We also add tomato, chili pepper and cumin and once again mix the future Turkish lentil soup.

Chili flakes can be purchased at markets or made by yourself. It is nothing but hot pepper dried and chopped into fairly large pieces. But without seeds and partitions – only the walls of the fruit. You can replace it with regular red ground pepper, but the aroma will not be as rich. And in this case, consider your own tastes regarding the desired spiciness.

Pour in two mugs (500 g) of hot broth or water. Salt and pepper. Mix, bring to a boil. After that, cover the pan with a lid and simmer for about 20 minutes.

Remove the lid and mix the Turkish lentil soup well again. If necessary (if there is very little liquid left), add a little water.

Simmer under the lid for another 15-20 minutes, then remove from the heat and, without waiting for the dish to dry, knead strongly until a homogeneous mass. After that, you can also use a blender to make the Turkish lentil soup even smoother and smoother.

Before serving, top the Turkish lentil soup in each plate with a pinch of chili flakes and a mint leaf. Garnish with a lemon wedge, from which squeeze a few drops of juice onto a plate. Bon appetit!
