Vegetable cabbage rolls “Vegetarian” (lean cabbage rolls) – ingredients

  • Savoy cabbage – 1 head.
  • Rice – 100
  • Bulgur (or barley groats) – 50 g.
  • Red lentils – ½ cup.
  • Onion – 1 piece.
  • Carrot – 1 piece.
  • Mushrooms – 250 g.
  • Broth (water) – 1,25 l.
  • Tomato sauce – 250 ml.
  • Tomato paste – 2 tbsp.
  • Worcestershire sauce – 1 tbsp.
  • Flour – 1 tbsp.
  • Olive oil – 1 tbsp.
  • Sunflower oil – 1 tbsp.
  • Paprika – tsp.
  • Red pepper – ½ tsp.
  • Turmeric – 1 tsp
  • Oregano – 1 tbsp.
  • Provence herbs – 1 tbsp.
  • Salt pepper.

Boil the rice until half cooked.

Pour a glass of water over the lentils, add salt, bring to a boil, cover with a lid, and cook for about 15 minutes until ready.

Add dry bulgur or barley groats, mix.

Peel the onion and cut it into cubes, grate the carrot on a coarse grater. Fry the onion until soft in olive oil, add carrots, stew until tender, salt and pepper. We are cooling.

Clean the mushrooms, cut them, fry them in oil for about 10 minutes, until the liquid evaporates completely. We are cooling.

Mix all the ingredients. Salt and pepper to taste.

Steam cabbage leaves in salted water. We spread the filling on the leaves, wrap the cabbage rolls.

Cover the bottom of the pan with leftover cabbage – make cabbage rolls.

Pour the cabbage rolls with hot broth, put on a slow fire, stew for about 30 minutes.

Drain the broth from the cabbage rolls, add tomato sauce, tomato paste, Worcestershire sauce, oregano, Provencal herbs, and flour diluted in a few spoons of water. Bring everything to a boil. Season to taste with salt and pepper, cook the sauce for about 10 minutes.

Pour the prepared sauce over the cabbage rolls, simmer for another 5 minutes over low heat. You can shake the pan a little so that the sauce is evenly distributed.
