Vegetable soup with asparagus – ingredients

  • For 1,5 liter of water:
  • Asparagus – 500 g.
  • Potatoes – 4 pcs.
  • Carrot – 2 pc.
  • Zucchini – 2 pcs.
  • Tomatoes – 4 pcs.
  • Onion – 1 pc.
  • Garlic – 1 clove.
  • Celery root – 50 g.
  • Parsley greens – 1 bunch.
  • Salt pepper.
  • Oil/butter for frying.

Vegetable soup with asparagus – recipe

Finely dice the garlic and onion and fry in butter until golden.

Peel the potatoes and carrots and cut them into cubes. Add to the pan with onions and garlic and fry them a little together!

Then pour cold water and bring to a boil. Boil over low heat with the lid closed for 10 minutes.

Pour hot water over the tomatoes to remove the skin. Peel the tomatoes and cut them into cubes.

We clean the asparagus, cutting off a little from both sides. If the asparagus stem does not look very attractive, then you can remove the top layer of the stem, as if peeling a carrot. Next, we cut it into 4 cm lengths.

Peel celery and zucchini from the top layer and cut into strips.

Add the rest of the vegetables to the pan and cook on low heat for another 10-12 minutes.

While the soup is cooking, wash and finely chop the greens.

The vegetables should become soft, then the soup can be considered ready.

Vegetable soup with asparagus is served in portioned bowls and sprinkled with chopped greens.
