Vegetable soup with cherry

Cheremsha, or bear onion, is a completely unique plant. This is one of the earliest sources of vitamins in the spring: it is collected in April – May. Cheremsha has many useful substances. It is important for us that it prevents the accumulation of cholesterol in the blood, normalizes metabolism and smells so pleasantly of garlic.

We offer to cook vegetable soup with cheremshe. This is a good source of vitamins that we need so much in early spring. Even those who cannot tolerate the smell or taste of garlic will like the delicious, fragrant soup.

Some varieties of cherry trees have thick, long stems, and small leaves. That’s why you need to cook such cheremsha a little in the soup, a few minutes will be enough.

Peel and cut onions, celery and potatoes: onions – into thin half rings (you can throw them whole), celery and potatoes – into cubes.

Fry onions in heated oil in a container with a thick bottom for about 5 minutes. Reduce the heat to low, add celery and potatoes, salt, pepper and mix. Cover with a lid and cook, stirring occasionally, for 15 minutes.

We slightly knead the contents with a pestle. Pour hot broth into the pan, stir, increase the heat, bring to a boil. Immediately reduce the heat.

Wash the cherry tree well, thinly slice it, add it to the soup. Salt, pepper, mix and remove from heat. Cover with a lid and set aside for 10 minutes. Serve hot.
