Vegetable soup with meatballs

When it’s cold outside and you want something tasty and warm, try cooking vegetable soup with meatballs, which is offered by Smakota (Smakotainfo.com). Ingredients for cooking vegetable soup with meatballs:

  • bell pepper – 1 pc.
  • carrots – 1 pcs.
  • leek – 1 stem.
  • tomatoes – 100 g.
  • potatoes – 3 pcs.
  • tomato paste – 1 tbsp.
  • canned beans – 1 can.
  • meat broth – 2 l.
  • minced meat – 500 g.
  • greens – to taste.
  • salt – to taste.
  • ground black pepper – to taste.
  • noodles – to taste.

Cooking vegetable soup with meatballs:

We cook meat broth. Peel the potatoes and cut them into small cubes. We send it to cook in broth.

We salt the minced meat, pepper it, beat it and form meatballs. We send them to cook in broth.

Cut onions and leeks into circles and fry in oil. Carrots are washed, cleaned, grated and sent to stew with onions.

Wash the bell pepper, cut it and remove the seeds and membranes. Cut into strips. We send it to stew with carrots.

To carrots and peppers, cut tomatoes, peel them beforehand and add tomato paste. Simmer everything for 5 minutes.

We send the stewed vegetables to the broth. Cook on low heat for 10 minutes.

We open the beans, drain the water and, if necessary, wash them. We send to vegetable soup with meatballs.

Dip the noodles in the soup and cook until ready. Salt and pepper to taste.
