Vegetarian carrot and bean burger

In his new book, he focused on 11 ingredients that everyone usually has at home or in a nearby grocery store. Volger’s vegetarian dishes are not only healthy, but also tasty and do not take much time. The proof is this a recipe for a vegetarian burger made from carrots and beans.

Vegetarian carrot and bean burger – ingredients

  • breadcrumbs – 0,5 cups.
  • tomato paste – 1 tbsp.
  • carrots (medium size) – 2 pcs.
  • canned beans – 800-850 g.
  • egg – 1 pc.
  • apple cider vinegar – 1,5 tbsp.
  • onion (medium size) – 1 pc.
  • salt – 1,5 tsp.
  • ground black pepper
  • olive or sunflower oil

It is better to take coarsely ground breadcrumbs (for example, Japanese panko breadcrumbs) – this way the burger will turn out crispier.

Canned beans (you still need to drain the liquid from them and let them dry) can be replaced with freshly boiled ones.

Instead of a regular onion, you can use 3 shallots.

Vegetarian carrot and bean burger – ingredients

Heat a frying pan with 1 tablespoon of oil over low heat. Pour panko breadcrumbs into it and, stirring often, brown them (3–5 min.). If you take ordinary crackers, reduce the time, because they are already brown and crispier.

Pour the breadcrumbs into a bowl, pour another 2 tablespoons of oil into the pan. Add onion. Fry over low heat until it becomes soft and golden (8–10 min.).

Add tomato paste, salt, grated carrots to the pan and, stirring often, wait until the carrots become soft (another 8–10 minutes).

Pour in the vinegar, scraping up any bits from the sides and bottom of the pan. It should be practically dry. After that, remove from the heat and pour the mixture over the fried crackers.

Add the beans to the bowl and, using a spatula or pestle, mash all the ingredients until they resemble a paste-like mixture. However, do not overdo it – the pieces of beans should be visible and felt on the teeth afterwards. It is not scary even if some of the beans remain whole.

Pepper, add salt to taste. Kill the egg. Form several meatballs from this minced meat to the size you like.

Next, in a frying pan with a little oil on medium heat, fry the veggie burgers for 3-4 minutes on each side. They should be noticeably browned and a hard crust should form. done

It is better to eat the dish hot. You can create a hamburger to your own taste from a wheat bun cut lengthwise or slices of brown bread. Pickled red onions, slices of avocado and some hot sauce will be an ideal addition. You can pickle onions according to the following formula: 4-5 parts of wine vinegar and water, 1 part of salt and half of sugar. Put for a time from several hours to a week (if in the refrigerator).
