Let’s start cooking vinaigrette from baking vegetables. Wash the beets, carrots and potatoes thoroughly, wrap them in foil and bake them in an oven heated to 180 degrees until soft. Cool and cut into cubes. First beetroot. Pour it into the prepared deep bowl, pour oil and mix thoroughly. Now add carrots and mix again. Then pour the chopped potatoes, add a little more oil and mix well.

Also in vinaigrette add the drained peas and mix again.

Red onion for vinaigrette cut as small as possible, add to the vegetables, mix.

Also dice the pickles and add to the bowl. If a lot of juice was released when cutting the cucumber, drain the excess liquid.

All the ingredients are ready vinaigrette salt and pepper to taste. Add oil if necessary and mix everything again.

Cool down vinaigrette in the refrigerator for at least an hour. Now it can be served.
