We are preparing a nut cake. Grease the form with oil and sprinkle with flour. Finely grind nuts and mix with coffee and breadcrumbs. Beat whites and yolks separately, adding 60g of sugar to them. Carefully mix the whites into the yolks. Then add the dry ingredients to the egg mass and mix again carefully so that the mass does not settle too much. Pour the dough into the mold and bake for 40 minutes at 180C.

Pass through the smallest sieve of a meat grinder twice and mix with semolina, breadcrumbs and baking powder. Beat whites and yolks separately again with half portions of sugar. Mix the dry ingredients to the yolks, then add the proteins in portions. Pour the dough into a mold and bake at 175 degrees C for about 40-45 minutes.

For the cream, mix sugar with water and put on medium heat. As soon as the syrup boils, start beating the eggs and yolk to a fluffy mass for about 5 minutes. Pour the finished syrup in a thin stream into the eggs and continue beating until the mixture cools. Beat the butter until fluffy and gradually add the egg mixture to it in portions of 2-3 tablespoons. The temperature of the butter and eggs should be the same so that the cream does not separate. At the end, pour 2 spoons of brewed and cooled coffee. Cool the cream a little in the refrigerator for greater density before spreading.

Cut each cooled cake into 2 parts and soak them with coffee or liqueur. Assemble the braid by smearing cream on all the cakes, top and sides of the braid. Put in the refrigerator overnight to soak.
