Warm pumpkin and feta salad

Warm pumpkin and feta salad good for a de-stressing day for lunch or dinner. The salad is bright and healthy. For those who like feta cheese, this is a good and original option for its use. We recommend treating your loved ones to a warm salad.

Ingredients for preparing a warm pumpkin and feta salad

  • For the base of the salad
  • Red onion – 1 pc.
  • Pumpkin seeds – to taste.
  • Cumin – 1 tsp.
  • Olive oil – 1 tbsp.
  • Feta cheese – 100 g.
  • Salt – to taste.
  • pumpkin – 500 g.
  • For the filling
  • Honey – 1,5 tsp
  • Mustard – 1,5 tsp.
  • homemade mayonnaise – 40 g.

Preparing a warm salad from pumpkin and feta

Wash the pumpkin under running water, dry it and cut it into cubes of about 1.5-2 cm. Cut the fourth part of the bulb into rings.

We take a baking dish and put pumpkin, onion on it and sprinkle pumpkin seeds and cumin on top. Salt and pepper to taste and pour olive oil on top. Mix everything well and put in an oven heated to 190°C for 20 minutes. Stir periodically.

When the baked vegetables are ready, put them on a plate. Cut the fata cheese into 2 cm cubes and spread on the vegetables. Pour the dressing over the finished salad.

To prepare the dressing, you need to mix honey, mustard and mayonnaise to a uniform consistency. Store mayonnaise can also be used as a dressing (but homemade is more useful :))))).
