White borscht

Tsey white borscht comes from Poland and has nothing to do with our Ukrainian borscht. Despite this, the proposed dish is very tasty and filling, and is ideal for the cool season.

White borscht – ingredients

  • Water – 2 l.
  • Beef – 300 g.
  • Smoked bacon – 150 g.
  • Smoked sausage – 300 g.
  • Raw white sausages (weisswurst) – 4 pcs.
  • Onion-leek – 1 stem.
  • Onion – 1 pc.
  • Carrot – 1 pc.
  • Celery potato – 1 pc.
  • Garlic – 3 pc.
  • Bay leaf – 2 pcs.
  • Allspice – 4 peas.
  • Black pepper – 10 peas.
  • Dried marjoram – 1 tsp.
  • Horseradish – 2 tsp.
  • Lemon juice – 1 tsp.
  • Cream with a fat content of 33% – 100 ml.
  • Flour – 1 tbsp.
  • Salt, ground black pepper to taste.
  • Boiled eggs – 3 pcs.
  • Dill for serving.

White borscht recipe

Let’s start cooking white borscht. Put the beef in a saucepan, pour 2 liters of cold water and put it on the fire, bring it to a boil and remove the foam. Cook over low heat until soft, about 1 hour.

Let’s start with vegetables for white borscht. Peel the vegetables. Cut the onion, carrot and celery into small cubes, and the leek into half rings.

Let’s deal with meat products. Cut the bacon into medium pieces, the smoked sausage into circles. Heat the pan and put the bacon. When it browns and releases fat, add smoked sausage and fry until golden brown for another 5 minutes. Transfer to our pot with beef, fried sausage and bacon, leaving the fat in the pan. Pierce the white sausages in several places and also put them in the pan. Add vegetables and cook for 20 minutes.

Put in white borscht chopped garlic, bay leaf, fragrant and black peppercorns, marjoram and horseradish, cook for another 5 minutes. Get out of borscht beef and white sausages and cut (as desired).

Let’s prepare the dressing. Mix flour with cream and pour into borscht. Cook for 3 minutes, stirring constantly, and remove from heat, add salt and pepper to taste. Return the beef and sausages to the pot.

Cut the boiled eggs into 4 parts. Pour it out white borscht on plates, add eggs and sprinkle with dill. Done!
