Zucchini adjika

Today we will prepare a very tasty and soft zucchini adjika. Such zucchini adjika it turns out moderately spicy and sweet.

Ingredients for preparing zucchini adjika

  • zucchini – 6 kg.
  • carrots – 1 kg.
  • apples – ½ kg.
  • green Bulgarian pepper – 6 pieces.
  • tomatoes – 2 kg.
  • garlic – 10 heads.
  • hot red pepper – 5 pieces.
  • salt – 4 tbsp.
  • sugar – 1 cup.
  • oil – 1 cup.
  • vinegar 9% – 1 cup.

Step-by-step description of cooking zucchini adjika

This amount of ingredients yields 6 liters of finished adjika.

Let’s prepare all the ingredients. Wash the zucchini well and cut them into pieces that fit in a meat grinder. Wash the apples, clean them, remove the hard core. Wash the pepper, cut out the seeds, and wash it again. Peel the garlic and carrots.

Pass all vegetables through a meat grinder. Add salt, sugar and oil to the resulting mass. We cook our adjika for about 40-45 minutes. Add vinegar 5-10 minutes before the end of cooking. Adjika is placed hot in sterile jars and immediately twisted.

Such adjika is stored very well even at room temperature.
