A recipe for making zucchini casserole with semolina

  • Zucchini – 1 kg.
  • Processed cheese – 200 g.
  • Egg – 2 pieces.
  • Onion – ½ large onion.
  • Semolina – 3-4 tbsp.
  • Olive oil – 1-2 tbsp.
  • Ground black pepper and salt – to taste.

Wash the zucchini well under running water. If the zucchini is no longer young, peel it. Grind on a coarse grater and set aside for 10-15 minutes. Peel the onion and cut it into thin half rings. Cut processed cheese into small pieces.

Next, we squeeze the grated zucchini from the juice and transfer them to a pan, add olive oil, onion and melted cheese, put the pan on a low heat. Stirring constantly, heat the zucchini mass until the cheese is completely dissolved, then turn off the heat and put the semolina in the pan, mix everything.

Beat the eggs separately. When the zucchini mass cools down, add eggs, salt and pepper to it, mix everything well. We put the mass in a greased and sprinkled with semolina form. We put it in an oven heated to 180 degrees for about 40-50 minutes.
