Peel the onion and cut it into cubes. Peel and finely chop the garlic. Melt butter in a pan, add onion and garlic.

Peel the carrots and potatoes and cut them into cubes, pour them into the pan with onions and garlic, fry for 4-5 minutes.

Wash the zucchini, dry it, cut it into cubes, put it in the pan with the rest of the vegetables and fry it for another 5 minutes.

Add half a liter of vegetable broth to the vegetables, salt, pepper, add parsley, turmeric and cardamom.

Let the soup cool down a little and beat it with a blender. If the soup seems too thick, add a little more broth.

We serve soup with sour cream. You can decorate with peeled pumpkin seeds and sun-dried tomatoes.
