Zucchini caviar with tomato paste (canning for the winter) – it is prepared quite easily and for a short time. Therefore, in the season when zucchini and other vegetables are in abundance, we invite you to prepare such a delicious snack.

Zucchini caviar with tomato paste – ingredients

  • Zucchini – 400 g (weight of ready peeled or young zucchini).
  • Onion – 200 g.
  • Tomato paste – 30 g.
  • Oil – 40 g.
  • Vinegar – 10 g.
  • Sugar – 20 g.
  • Salt – 10 g.
  • Ground black pepper – according to taste and desire.

Zucchini caviar with tomato paste – cooking recipe

Peel carrots and onions, cut into not very thick pieces.

If the zucchini is not young, cut off the skin and clean the middle. We only cut the edges from young zucchini.

Cut the zucchini into medium-sized cubes.

Heat the oil in a saucepan, pour in the carrots, simmer on low heat for 10 minutes, add zucchini and onions, add sugar and salt, mix, cover with a lid, and simmer for 30 minutes. Pepper if desired.

While the vegetables are cooking, wash and sterilize the jars.

Add tomato paste to the vegetables, mix, simmer for another 20 minutes.

Pour vinegar, mix. Remove the pan from the stove, cool for a few minutes.

Beat the vegetables with an immersion blender to a puree state.

We return the zucchini caviar back to the fire, cook under the lid for another 3 minutes.

Pour the boiling caviar into a sterilized jar, cover with a sterilized lid, seal tightly. Cover with a warm blanket, leave to cool.

Leave in a cool, dark place.
