Zucchini snack for the winter, preservation – a very tasty salad for the winter. Zucchini will always give birth to a lot, so every housewife will need such a recipe. In winter, a zucchini snack can be eaten with anything – potatoes, buckwheat, rice, pasta.

The ingredients below make about 4,5 liters of ready-made salad.

  • Zucchini – 3 kg.
  • Bulgarian pepper – 1 kg.
  • Tomato – 1 kg.
  • Parsley – 200 g.
  • Garlic – 2 heads.
  • Salt – 80 g.
  • Sugar – 200 g.
  • Oil – 350 ml.
  • Vinegar (9%) – 100 ml.
  • Black pepper – 12 peas.
  • Allspice – 6 peas.

***WARNING! The list of ingredients indicates the weight of already cleaned zucchini (from the skin and, if necessary, seeds) and pepper.

Wash the parsley well. Peel the garlic.

Grind tomatoes, garlic and parsley in a meat grinder.

Clean the zucchini, remove the seeds (if hard), cut into small cubes.

We clean the pepper, cut it into strips or cubes, not very roughly either.

Add sugar, salt, oil, pepper and vinegar to the tomato mixture, bring to a boil.

Add the zucchini and sweet pepper to the boiling marinade. Bring to a boil, cover with a lid, cook the mass for 60 minutes. Stir periodically.

Pour the boiling mass into sterilized jars and cover with sterilized lids. We turn the cans upside down, wrap them with a warm blanket, leave to cool completely.
