Zucchini Uncle Bens for the winter

Today, Smakota (Smakotainfo.com) returns to the topic of conservation. This time we will cook with you delicious zucchini “Uncle Ben’s”. Such a “salad” will go well with other dishes, such preservation can be safely served on the festive table to guests. Believe me, she will be one of the first to disappear from the table .

Ingredients for Zucchini “Uncle Bensu”

  • Zucchini – 1,5 kg.
  • Bulgarian pepper (sweet) – 6 pieces.
  • Onion – 6 pieces.
  • Tomatoes – 1 kg.
  • Oil – 2/3 cup.
  • Sugar – 2/3 cup.
  • Salt – 2 tbsp.
  • Vinegar (9%) – 0,5 cups.

Preparation of Zucchini “Uncle Bensu”

Let’s start by preparing the marinade: mix oil, sugar, salt and vinegar. Mix everything well. Wash the zucchini well and cut them into cubes. Cut the onion into half rings. Pass the tomatoes through a meat grinder. Cut the pepper into strips.

We put the marinade on the fire, when it boils, pour in the zucchini, cook for 5 minutes, stirring. Next, we send the onion to the pan, also cook for 5 minutes. Add pepper and cook again for 5 minutes. Pour in the tomatoes, cook for 10 minutes, stirring.

Place the hot salad in sterilized jars and roll up.

The specified amount of ingredients yields 3-3,5 liters of salad.
