Recipe for making zuccotto with cherries

  • For the dough:
  • Flour – 100 g.
  • Sugar – 120 g.
  • Eggs – 2 pieces.
  • Butter – 100 g.
  • Cocoa – 20 g.
  • Baking powder – 2 tsp.
  • For the cream:
  • Powdered sugar – 100 g.
  • Almonds – 50 g.
  • Cream (33-35%) – 300 ml.

So, let’s start with cherries, wash them, remove the pits (or just defrost them, if they are frozen).

The cherry is ready, let’s start the dough. Mix flour, cocoa and baking powder. Add soft butter and sugar, mix well. Beat the eggs well (with a mixer) and pour them into the dough.

We cover the baking sheet with baking paper (35×30 baking sheet), spread the dough on the baking sheet, flatten it and put it in the oven heated to 180 degrees for 15-20 minutes. We take it out, carefully transfer the cake to the table together with the paper. We take a rounded container with a volume of 1,5 l (salad bowl, heat-resistant form, metal bowl. ), turn it over with its wide side onto the cake (in the corner) and cut out a circle, set it aside.

We cover the container with which we cut the circle with cling film. Cut the remaining cake into triangles. We lay out the whole bowl with the cut pieces, if gaps are formed somewhere, cover them with the lids left over from the cake. The entire bowl must be closed.

Now let’s get to the cream. Drain the excess liquid from the cherries. Chop the nuts. Tremo chocolate on a coarse grater. Take the cream out of the refrigerator (it should be well chilled). You can also cool the container in which the cream and the whipping attachments will be whipped.

Beat cream with powdered sugar until thick, add nuts and chocolate, mix. Add cherry, mix again carefully. We put this cream in a cake-lined container. Cover the top with a cut round cake. Cover with cling film and put in the fridge for 6-8 hours.

Take it out of the refrigerator, turn it over on a plate. You can decorate the top with melted chocolate, chocolate fudge, simply sprinkle with powder, fresh berries, dessert cream, or anything else, let your imagination run wild.

You need to store such a dessert in the refrigerator immediately before serving.
